Carbon Footprint for the school catering sector: what are the impacts?What is the environmental footprint of a school canteen service? This is what was analyzed in a study conducted by Ambiente Italia on behalf of Eutourist New Srl, an Italian company in the catering sector.

La Carbon Footprint it was calculated with reference to the provision of meals prepared and administered in one month in a representative school in the V district of Rome. All have been analysed resources and processes involved in the provision of the service and subsequently quantified the emissions generated by each of them.

RESULTS

Ambiente Italia has estimated that a month of canteen service has an overall carbon footprint of over 17 thousand kg of CO2e, of which 59,67% deriving only from raw food materials used for the preparation of meals (menu consisting of breakfast, lunch and snack).

The distribution of the remaining contributions to the Carbon Footprint: 

  • 9,26% Auxiliary materials for cleaning and administration 
  • 14,15% Meal preparation 
  • 0,59% Transportation of raw materials and meals 
  • 16,33% End of life raw materials and materials

The certification was a requirement contained in the call for tenders won by Eutourist New for the assignment of the service in the kindergarten, primary and lower secondary schools of Municipio V in Rome. Further confirmation of how much attention to criteria ESG has now become strategic for companies in all sectors.
